So you write the sincere, but you should bake the sweet.

Introducing the Madera Cake with Lemon Syrup

This cake  has received many praises.

"The sugar-crusted cake is soaked in lemon syrup, so it stays moist and is infused with tangy citrus, serve it sliced with tea for one of those 'caring and sharing' sessions."

I suggest a tall gorgeous milk (of your choice).

Perfect for Sunday brunches, afternoon snacks, and anytime you want something sweet, but not so over poweringly and tart, not squint your eyes and shake your head sour.  This cake is light and refreshing perfect for the summer. 

It lives up to it's gold color and tastes like it looks, warm sunshine.

SERVES TEN

INGREDIENTS
1 cup plus of 2 tbsp butter, softened
1 generous cup of caster (superfine) sugar
5 eggs
2 1/2 cups plain (all-purpose) flour, sifted
2 tsp baking powder
salt

For the sugar crust
4 tbsp lemon juice
1 tbsp golden (light corn) syrup
2 tbsp granulated sugar

1. Preheat the oven to 350 degrees Fahrenheit. Grease a 2 1/4  lb loaf tin. Beat the butter and sugar until light and creamy, then gradually beat in the eggs.

2. Mix the sifted flour, baking powder and salt, and fold in gently. Spoon into the prepared tin, level the top and bake for 1 1/4  hours, until a skewer pushed into the middle comes out clean.

3. Remove the cake from the oven and, while still warm and in the tin, use a skewer to pierce it several times right the way through. Warm together the lemon juice and syrup, add the sugar and immediately spoon over the cake, so the flavoured syrup soaks through but leaves doe sugar crystals on the top. Chill the cake for several house or overnight before serving. (OR DON'T sometimes I can't wait and don't wait to eat this one)

COOK'S TIP 
Make double the quantity of cake. Omit the syrup from one and leave plain. Simply cool, wrap and freeze. 

Whenever us DoDos make this cake we double the syrup and substitute maple syrup for the corn syrup. We also enjoy the cake hot and crumbly without the syrup.

Seriously so good you'll want slice after slice. I would break my no eating off the floor rule for this yellow awesomeness. (But I kicked that habit when I realized that I am not a dog.)
